Cinnamon Roasted Butternut Squash Soup
Here’s the recipe I use for Butternut Squash Soup:
1 large butternut squash, 2 1/2 to 3 pounds
1 1/2 cups of apple cider
1/3 cup of brown sugar
2 cinnamon sticks, cut in half crosswise
2 tablespoons melted butter
1 cup diced onions
2 tablespoons butter
4 cups of chicken broth (sometimes I substitute vegetable broth if I’m serving it to vegetarians)
